- 1 tbsp white miso paste
- 1 tbsp tahini
- 1 tbsp tamari
- 2 tbsp rice vinegar
- 2 tbsp maple syrup
- 1 clove garlic minced
- 1 tsp fresh ginger grated
For the salad:
- 2 bundles soba noodles
- 1 cup edamame
- 1 handful green beans
- 2 carrots shredded
- 1/8 red cabbage shredded
- 1-2 tbsp black sesame seeds for garnish
Mix the dressing ingredients together in a small bowl and set aside.
Cook the soba noodles according to packet directions, then drain and rinse with cold water and set aside to drain.
Steam edamame beans and green beans until semi-cooked, but still firm and crunchy. Rinse with cold water and drain.
Toss all the salad ingredients and the dressing in a large bowl. Refrigerate until ready to serve.
Sprinkle with black sesame seeds to serve.
