Smoky Black Bean Beet Burger

- 3/4 cup cooked quinoa
- 1/2 red onion minced
- 1 cup mushrooms finely chopped
- 1 15 oz can black beans rinsed and drained
- 1 beet medium, finely grated
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- 1/2 cup walnuts ground
- salt to taste
- pepper to taste
In a large non-stick skillet sauté the onion with optional olive oil over medium-low heat for about 5 minutes.
Stir in the mushrooms. Season with salt and pepper and cook for a couple more minutes, until the mushrooms and onions are slightly browned and fragrant.
Transfer to a large bowl and add black beans and mash. Mix in add the quinoa, beets and spices. Add the ground walnuts until the mixture is thick enough to form into patties.
Preheat the oven to 375 degrees. In the meantime, refrigerate the mixture for 15 minutes.
Line a baking sheet a silicone liner. Form mixture into roughly 8 patties. Arrange burgers on a baking sheet and spray the tops with olive oil. Bake for 15 minutes, flip, return to the oven and bake for 15 more minutes. If needed, bake for a few more minutes to crisp up.
Serve on small buns or atop mixed greens.
