For the salad:

chickpeas
rinsed and drained

honeycrisp apple
cored and diced

pecans
chopped and toasted

dried cherries

flat-leaf parsley

For the dressing:

hummus

pure maple syrup

For the wraps:

whole wheat flour tortillas
or other wrap, can also use collard green leaves as a wrap

Instructions
In a large bowl, mash the chickpeas lightly with a fork. Add in the rest of the ingredients.
In a separate bowl, make the dressing by mixing all the ingredients until smooth. If needs to be thinned add a couple of tablespoonfuls of water.
Mix the dressing into the chickpea salad.
Assemble the wraps by layering spinach leaves, shredded carrots and the salad inside the wraps.
