Pulse all the walnut chorizo ingredients in a blender until it has a course crumb texture. Keep adding water a tablespoon at a time until the mixture resembles cooked chorizo.
Line a small baking sheet with parchment paper. Spread a layer of tortilla chips on the baking sheet. Spread out some refried beans over the top. Spread out the walnut chorizo. Place in the oven until warmed through for about 10 minutes.
Pull out of the oven and sprinkle with the tomatoes, cilantro, radishes, avocado and cilantro.
