Grilled Veggie Skewers with Chimichurri

For Veggie Skewers:
- 1 large sweet potato peeled and cut into 1-1.2 inch pieces
- 5-8 baby red potatoes quartered
- 1 red bell pepper cleaned and cut into large pieces
- 1 yellow bell pepper cleaned and cut into large pieces
- 1 red onion peeled and cut into large pieces
- 1 pkg baby portobello mushrooms whole or cut into halves
- 2-5 corn ears, cut into 2 inch thick slices
- 1-2 Tbsp avocado oil OPTIONAL
- sea salt to taste
- black pepper to taste
For Chimichurri:
- 1 shallot finely chopped
- 1 jalapeño finely chopped, OPTIONAL
- 3-4 garlic cloves thinly sliced or finely chopped
- ½ cup red wine vinegar
- 1 tsp kosher salt or to taste
- ½ cup cilantro finely chopped
- ¼ cup flat-leaf parsley finely chopped
- 2 Tbsp. oregano finely chopped
- ¾ cup extra-virgin olive oil OPTIONAL, sub with veggie broth
Heat up your grill. If using wooden skewers, soak in water, preferably overnight
Place cut up sweet potato and baby red potatoes in a large pot and cover with water. Bring to a boil and cook for 10-15 minutes or until almost tender. They need to be firm enough to stay on a skewer, but tender enough to cook fast on the grill. Drain and let cool slightly.
Make the skewers by alternating vegetable pieces, with enough room left on top and bottom of the skewers for easy handling on the grill. Season with salt and pepper on all sides.
Grill about 10-15 minutes until you see grill marks and vegetables are tender and cooked through. Rotate the skewers from side to side once or twice while cooking to make sure they cook evenly. Pull the skewers off the grill and set aside to cool off slightly.
While the vegetables are cooling, prepare your chimichurri sauce. Combine all the ingredients in a blender and pulse until smooth. Serve with the veggie skewers.
