French Toast with Berry Drizzle

For the French toast:
- 3/4 cup unsweetened almond milk
- 3/4 cup coconut milk
- 1 tbsp agave nectar
- 1/4 cup chickpea flour
- 2 1/2 tbsp nutritional yeast
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 8 slices whole-grain vegan bread
For the berry drizzle:
- 1/4 cup Medjool dates pitted and chopped
- 1/4 cup hot water
- 1 cup frozen mixed berries
- 1/2 lemon juice and zest of
Combine dates and hot water for the berry drizzle in a heatproof container and set aside to soften. Set the frozen berries out to thaw.
To make the batter, whisk together all the french toast ingredients except the bread in shallow baking dish.
Heat a large non-stick skillet over medium-low heat.
Dip bread in batter on both sides, place in the hot skillet and cook for 2 minutes on each side until golden brown. Keep in a warm oven until ready to serve.
Transfer the softened dates and water into a blender. Pulse until smooth. Add the thawed frozen berries to the blender and blend until smooth. Transfer to a small pot and heat through on the stove.
Serve the French toast with the berry drizzle.
