"Fig Newtons" Energy Bites

- 3 cups dried figs
- 1 cup walnut pieces
- 1/4 cup flax seed meal (ground flaxseed)
- 1 tbsp pure vanilla extract
- 1/2 tsp salt
Make sure to remove any hard stems from the dried figs. Combine all ingredients in a large food processor and pulse until finely chopped, 4-5 minutes, until the consistency is similar to sand. Remove the blade or transfer into a bowl.
Scoop mixture out with a small ice cream scoop. Rolling in between your hands until you form a ball.
Refrigerate in an air-tight container for up to 7 days.
