Ingredients
For the Avocado Slaw Dressing:
2avocadospeeled and pitted
1lemonjuice of
1limezest and juice of
1cucumberpeeled
1/4cupwater
1/4cupcilantro
1/2 to 1tspchili powder
1/4tspsea saltor to taste
For BBQ jackfruit:
2cansjackfruitin brine, rinsed and drained
2-3cupsBBQ sauce
To serve:
8whole grain burger buns or similar
1bagcole slaw mix
Instructions
Coarsely chop jackfruit. Transfer to the slow cooker. Mix in bbq sauce. Cover and let cook for 4 hours on slow.
Before serving, make the dressing. Blend all the dressing ingredients in a blender. Transfer the cole slaw mix into a mixing bowl. Dress with avocado dressing.
Serve with buns and a side of cole slaw.
Notes
You can make this recipe in an Instant Pot (or another pressure cooker). Place chopped jackfruit with 1/2 cup water and cook on high pressure for 5 min. Then let it release naturally for 10 minutes and finish releasing manually. Drain, shred some more and add BBQ sauce, and it's ready to serve. The whole thing takes about 20-25 minutes, just enough time to get your cole slaw or another favorite salad ready and set your plates for dinner.
