Place the sweet potato slices on a silicone mat lined baking sheet. Bake for 15 minutes. Flip, and roast for additional 5-7 minutes.
Place tofu on a cookie sheet lined with a silicone liner. Season with salt and pepper. Bake until golden brown, about 40 minutes, turning halfway through. Pour BBQ sauce over the tofu and toss to coat. Bake an additional 5 minutes.
