- 1 tbsp ground flaxseed (flaxseed meal)
- 2 ½ tbsp warm water
- ½ cup oat flour
- 1 ½ cup quick cooking oats
- 1 tbsp baking powder
- 1 tsp baking soda
- 2 tbsp pumpkin pie spice
- 1 tbsp cinnamon
- 4 granny smith apples peeled, cored and thinly sliced
- ½ cup date paste
- 1 cup pumpkin puree
- 1 tsp pure vanilla extract
- ¼ cup water optional
Preheat the oven to 350 degrees.
In a small bowl, mix the ground flax seeds with the water and let thicken for 10 minutes.
In a large bow, mix all the dry ingredients.
In a separate bowl, combine sliced apples, the pumpkin puree, vanilla extract, flaxseed mixture, and date paste and mix well.
Combine the dry ingredients with the apple mixture and mix well. If needed, add a little more water if too dry.
Transfer the mixture in a 8 x 11 in baking dish and bake for 30-35 minutes.
