- 1 tbsp ground flax seed
- 3 tbsp warm water
- ¾ cup almond butter creamy
- 1 zucchini small to medium, grated
- ¼ cup maple syrup
- 1 tsp pure vanilla extract
- ¾ tsp baking soda
- 2 tsp ground cinnamon
- ¼ tsp nutmeg
- ¼ tsp sea salt
- 1/3 cup mini chocolate chips OPTIONAL
In a small bowl, mix ground flaxseed and warm water. Let sit for 5-10 minutes to thicken and set.
Pre-heat the oven to 350. Spray an 8x8 inch baking pan with cooking spray. Set aside.
Stir together almond butter, zucchini, flaxseed mixture, maple syrup and vanilla in a large bowl until combined.
Stir in baking soda, cinnamon, nutmeg, and salt. Mix in mini chocolate chips.
Bake at 350 for 30 minutes, until a toothpick inserted in the middle comes out clean.
