Ingredients

  • 1 clove garlic minced
  • 1 tbsp olive oil OPTIONAL, or veggie broth if not using oil
  • 4 large portobello mushrooms thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 sweet onion thinly sliced
  • 1 tbsp parsley chopped
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp brown rice flour
  • ½ cup low-sodium vegetable broth
  • 6 whole-grain vegan hot dog buns

Instructions

  • Sauté garlic in a pan using oil or broth until lightly browned. Add veggies and cook covered until mushrooms release some liquid.
  • Remove cover and add parsley, salt and pepper and mix well. Add flour and veggie broth and continue to cook until juice thickens.
  • Remove from heat and serve in buns.
