Soba Noodle Salad

Ingredients
- 1 tbsp white miso paste
- 1 tbsp tahini
- 1 tbsp tamari
- 2 tbsp rice vinegar
- 2 tbsp maple syrup
- 1 clove garlic minced
- 1 tsp fresh ginger grated
For the salad:
- 2 bundles soba noodles
- 1 cup edamame
- 1 handful green beans
- 2 carrots shredded
- 1/8 red cabbage shredded
- 1-2 tbsp black sesame seeds for garnish
Instructions
- Mix the dressing ingredients together in a small bowl and set aside.
- Cook the soba noodles according to packet directions, then drain and rinse with cold water and set aside to drain.
- Steam edamame beans and green beans until semi-cooked, but still firm and crunchy. Rinse with cold water and drain.
- Toss all the salad ingredients and the dressing in a large bowl. Refrigerate until ready to serve.
- Sprinkle with black sesame seeds to serve.
