Soba Noodle Salad

Ingredients

  • 1 tbsp white miso paste
  • 1 tbsp tahini
  • 1 tbsp tamari
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated

For the salad:

  • 2 bundles soba noodles
  • 1 cup edamame
  • 1 handful green beans
  • 2 carrots shredded
  • 1/8 red cabbage shredded
  • 1-2 tbsp black sesame seeds for garnish

Instructions

  • Mix the dressing ingredients together in a small bowl and set aside.
  • Cook the soba noodles according to packet directions, then drain and rinse with cold water and set aside to drain.
  • Steam edamame beans and green beans until semi-cooked, but still firm and crunchy. Rinse with cold water and drain.
  • Toss all the salad ingredients and the dressing in a large bowl. Refrigerate until ready to serve.
  • Sprinkle with black sesame seeds to serve.
