Smoky Black Bean Beet Burger

Ingredients

  • 3/4 cup cooked quinoa
  • 1/2 red onion minced
  • 1 cup mushrooms finely chopped
  • 1 15 oz can black beans rinsed and drained
  • 1 beet medium, finely grated
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/2 cup walnuts ground
  • salt to taste
  • pepper to taste

Instructions

  • In a large non-stick skillet sauté the onion with optional olive oil over medium-low heat for about 5 minutes.
  • Stir in the mushrooms. Season with salt and pepper and cook for a couple more minutes, until the mushrooms and onions are slightly browned and fragrant.
  • Transfer to a large bowl and add black beans and mash. Mix in add the quinoa, beets and spices. Add the ground walnuts until the mixture is thick enough to form into patties.
  • Preheat the oven to 375 degrees. In the meantime, refrigerate the mixture for 15 minutes.
  • Line a baking sheet a silicone liner. Form mixture into roughly 8 patties. Arrange burgers on a baking sheet and spray the tops with olive oil. Bake for 15 minutes, flip, return to the oven and bake for 15 more minutes. If needed, bake for a few more minutes to crisp up.
  • Serve on small buns or atop mixed greens.
