Scandinavian Blueberry Bisque

Ingredients

  • 4 cups blueberries fresh or frozen
  • 6 cups orange juice
  • 1/4 cup maple syrup
  • 1/4 tsp ground cinnamon
  • 2 tbsp water
  • 2 tbsp cornstarch
  • 3/4 tsp orange peel grated
  • non-dairy yogurt for serving

Instructions

  • In a large saucepan, combine blueberries, orange juice, brown sugar and cinnamon. Bring to a boil.
  • In a small bowl, combine cornstarch and water; gradually stir into blueberry mixture.
  • Cook, stirring frequently, until mixture comes to a simmer and thickens slightly.
  • Remove from heat; stir in orange peel.
  • Let cool 15 minutes. Blend with an immersion blender. For best results, blend in a blender in batches. Cover and chill until ready to serve.
  • Serve soup cold with a swirl of yogurt and a few whole blueberries, if desired.
