Nachos with Walnut Chorizo

Ingredients

For the walnut chorizo:

  • 1 cup walnuts
  • ½ tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp ground chipotle chili
  • 1 tsp dried oregano
  • 1 tbsp tomato paste
  • 1 tbsp water and more to desired consistency

For nachos:

  • 1 bag tortilla chips
  • 1 cup vegetarian refried beans
  • 1 cup roma tomatoes diced
  • 2 avocados sliced
  • 3 radishes sliced
  • ¼ cup cilantro chopped

Instructions

  • Preheat the oven to 375 degrees.
  • Pulse all the walnut chorizo ingredients in a blender until it has a course crumb texture. Keep adding water a tablespoon at a time until the mixture resembles cooked chorizo.
  • Line a small baking sheet with parchment paper. Spread a layer of tortilla chips on the baking sheet. Spread out some refried beans over the top. Spread out the walnut chorizo. Place in the oven until warmed through for about 10 minutes.
  • Pull out of the oven and sprinkle with the tomatoes, cilantro, radishes, avocado and cilantro.
