French Toast with Berry Drizzle

Ingredients

For the French toast:

  • 3/4 cup unsweetened almond milk
  • 3/4 cup coconut milk
  • 1 tbsp agave nectar
  • 1/4 cup chickpea flour
  • 2 1/2 tbsp nutritional yeast
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 8 slices whole-grain vegan bread

For the berry drizzle:

  • 1/4 cup Medjool dates pitted and chopped
  • 1/4 cup hot water
  • 1 cup frozen mixed berries
  • 1/2 lemon juice and zest of

Instructions

  • Combine dates and hot water for the berry drizzle in a heatproof container and set aside to soften. Set the frozen berries out to thaw.
  • To make the batter, whisk together all the french toast ingredients except the bread in shallow baking dish.
  • Heat a large non-stick skillet over medium-low heat.
  • Dip bread in batter on both sides, place in the hot skillet and cook for 2 minutes on each side until golden brown. Keep in a warm oven until ready to serve.
  • Transfer the softened dates and water into a blender. Pulse until smooth. Add the thawed frozen berries to the blender and blend until smooth. Transfer to a small pot and heat through on the stove.
  • Serve the French toast with the berry drizzle.
