French Toast with Berry Drizzle

Ingredients
For the French toast:
- 3/4 cup unsweetened almond milk
- 3/4 cup coconut milk
- 1 tbsp agave nectar
- 1/4 cup chickpea flour
- 2 1/2 tbsp nutritional yeast
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 8 slices whole-grain vegan bread
For the berry drizzle:
- 1/4 cup Medjool dates pitted and chopped
- 1/4 cup hot water
- 1 cup frozen mixed berries
- 1/2 lemon juice and zest of
Instructions
- Combine dates and hot water for the berry drizzle in a heatproof container and set aside to soften. Set the frozen berries out to thaw.
- To make the batter, whisk together all the french toast ingredients except the bread in shallow baking dish.
- Heat a large non-stick skillet over medium-low heat.
- Dip bread in batter on both sides, place in the hot skillet and cook for 2 minutes on each side until golden brown. Keep in a warm oven until ready to serve.
- Transfer the softened dates and water into a blender. Pulse until smooth. Add the thawed frozen berries to the blender and blend until smooth. Transfer to a small pot and heat through on the stove.
- Serve the French toast with the berry drizzle.
