"Fig Newtons" Energy Bites

Ingredients

  • 3 cups dried figs
  • 1 cup walnut pieces
  • 1/4 cup flax seed meal (ground flaxseed)
  • 1 tbsp pure vanilla extract
  • 1/2 tsp salt

Instructions

  • Make sure to remove any hard stems from the dried figs. Combine all ingredients in a large food processor and pulse until finely chopped, 4-5 minutes, until the consistency is similar to sand. Remove the blade or transfer into a bowl.
  • Scoop mixture out with a small ice cream scoop. Rolling in between your hands until you form a ball.
  • Refrigerate in an air-tight container for up to 7 days.
