This BBQ pulled jackfruit is a mouthwatering, plant-based alternative to traditional pulled pork. It’s perfect for sandwiches, tacos, or as a topping for salads.

Instructions

Step 1

Drain and rinse the jackfruit. Coarsely chop.

Step 2
Transfer to the slow cooker. Mix in bbq sauce. Cover and let cook for 4 hours on slow.
Step 3
When the jackfruit is close to being done, make the avocado dressing. Blend all the dressing ingredients in a blender. Transfer the cole slaw mix into a mixing bowl. Dress with avocado dressing.
Serve with buns and a side of cole slaw.

Ingredients

For the Avocado Slaw Dressing:

  • 2 avocados peeled and pitted
  • 1 lemon juice of
  • 1 lime zest and juice of
  • 1 cucumber peeled
  • 1/4 cup water
  • 1/4 cup cilantro
  • 1/2 to 1 tsp chili powder
  • 1/4 tsp sea salt or to taste

For BBQ jackfruit:

  • 2 cans jackfruit in brine, rinsed and drained
  • 2-3 cups BBQ sauce

To serve:

  • 8 whole grain burger buns or similar
  • 1 bag cole slaw mix

Instructions

  • Coarsely chop jackfruit. Transfer to the slow cooker. Mix in bbq sauce. Cover and let cook for 4 hours on slow.
  • Before serving, make the dressing. Blend all the dressing ingredients in a blender. Transfer the cole slaw mix into a mixing bowl. Dress with avocado dressing.
  • Serve with buns and a side of cole slaw.

Notes

You can make this recipe in an Instant Pot (or another pressure cooker). 
Place chopped jackfruit with 1/2 cup water and cook on high pressure for 5 min. Then let it release naturally for 10 minutes and finish releasing manually.  
Drain, shred some more and add BBQ sauce, and it's ready to serve. The whole thing takes about 20-25 minutes, just enough time to get your cole slaw or another favorite salad ready and set your plates for dinner.
