Overnight Chocolate Raspberry Chia Pudding

Ingredients
- 4 cups unsweetened almond milk or coconut milk for extra-rich flavor and creaminess
- 1 cup frozen raspberries thawed
- 1/3 cup cocoa powder
- 1/4 cup maple syrup
- 2 tbsp vanilla extract
- pinch salt
- 1 cup chia seeds
Toppings:
- 1 banana sliced
- 1 cup fresh raspberries
- 1/4 cup shredded unsweetened coconut OPTIONAL
Instructions
- In a blender, blend all the pudding ingredients except the chia seeds until smooth.
- In a bowl, whisk the blended milk into the chia seeds. There will be more milk than seeds, so the seeds will absorb the liquid.
- Refrigerate for at least 3-4 hours or overnight.
- Top with fresh raspberries, sliced banana, and shredded coconut or your other favorite toppings.
