Overnight Chocolate Raspberry Chia Pudding

Ingredients

  • 4 cups unsweetened almond milk or coconut milk for extra-rich flavor and creaminess
  • 1 cup frozen raspberries thawed
  • 1/3 cup cocoa powder
  • 1/4 cup maple syrup
  • 2 tbsp vanilla extract
  • pinch salt
  • 1 cup chia seeds

Toppings:

  • 1 banana sliced
  • 1 cup fresh raspberries
  • 1/4 cup shredded unsweetened coconut OPTIONAL

Instructions

  • In a blender, blend all the pudding ingredients except the chia seeds until smooth.
  • In a bowl, whisk the blended milk into the chia seeds. There will be more milk than seeds, so the seeds will absorb the liquid.
  • Refrigerate for at least 3-4 hours or overnight.
  • Top with fresh raspberries, sliced banana, and shredded coconut or your other favorite toppings.
