Apple Pumpkin Pie Bake

Ingredients

  • 1 tbsp ground flaxseed (flaxseed meal)
  • 2 ½ tbsp warm water
  • ½ cup oat flour
  • 1 ½ cup quick cooking oats
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 tbsp pumpkin pie spice
  • 1 tbsp cinnamon
  • 4 granny smith apples peeled, cored and thinly sliced
  • ½ cup date paste
  • 1 cup pumpkin puree
  • 1 tsp pure vanilla extract
  • ¼ cup water optional

Instructions

  • Preheat the oven to 350 degrees.
  • In a small bowl, mix the ground flax seeds with the water and let thicken for 10 minutes.
  • In a large bow, mix all the dry ingredients.
  • In a separate bowl, combine sliced apples, the pumpkin puree, vanilla extract, flaxseed mixture, and date paste and mix well.
  • Combine the dry ingredients with the apple mixture and mix well. If needed, add a little more water if too dry.
  • Transfer the mixture in a 8 x 11 in baking dish and bake for 30-35 minutes.
