Almond Butter Zucchini Bars

Ingredients

  • 1 tbsp ground flax seed
  • 3 tbsp warm water
  • ¾ cup almond butter creamy
  • 1 zucchini small to medium, grated
  • ¼ cup maple syrup
  • 1 tsp pure vanilla extract
  • ¾ tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp sea salt
  • 1/3 cup mini chocolate chips OPTIONAL

Instructions

  • In a small bowl, mix ground flaxseed and warm water. Let sit for 5-10 minutes to thicken and set.
  • Pre-heat the oven to 350. Spray an 8x8 inch baking pan with cooking spray. Set aside.
  • Stir together almond butter, zucchini, flaxseed mixture, maple syrup and vanilla in a large bowl until combined.
  • Stir in baking soda, cinnamon, nutmeg, and salt. Mix in mini chocolate chips.
  • Bake at 350 for 30 minutes, until a toothpick inserted in the middle comes out clean.
