Mediterranean Sweet Potatoes with Spiced Chickpease

Ingredients

  • 4 sweet potatoes halved
  • 1 can chickpeas drained and rinsed
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 pint cherry tomatoes
  • 1/2 cup parsley

Lemon Garlic Sauce

  • 1 tbsp lemon juice
  • 1/4 cup hummus
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic minced
  • unsweetened almond milk or water to thin

Instructions

  • Preheat the oven to 400° F.
  • Place the sweet potatoes on the foil lined baking sheet cut side down.
  • In a bowl, mix the chickpeas with all the spices.
  • Place the chickpeas and the sweet potatoes in the oven and set a timer for 20 minutes.
  • In the meantime, make the sauce and prepare the toppings. Mix the lemon garlic sauce ingredients in a small bowl, and set aside. Chop parsley. Halve the grape tomatoes. Set aside.
  • When the time goes off, pull the chickpeas and let the potatoes roast for 10 more minutes.
  • Pull the potatoes from the oven. To serve, top your serving of sweet potatoes with the roasted chickpeas and grape tomatoes. Sprinkle with parsley and drizzle with lemon garlic sauce.
