Mediterranean Sweet Potatoes with Spiced Chickpease

Ingredients
- 4 sweet potatoes halved
- 1 can chickpeas drained and rinsed
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1 pint cherry tomatoes
- 1/2 cup parsley
Lemon Garlic Sauce
- 1 tbsp lemon juice
- 1/4 cup hummus
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic minced
- unsweetened almond milk or water to thin
Instructions
- Preheat the oven to 400° F.
- Place the sweet potatoes on the foil lined baking sheet cut side down.
- In a bowl, mix the chickpeas with all the spices.
- Place the chickpeas and the sweet potatoes in the oven and set a timer for 20 minutes.
- In the meantime, make the sauce and prepare the toppings. Mix the lemon garlic sauce ingredients in a small bowl, and set aside. Chop parsley. Halve the grape tomatoes. Set aside.
- When the time goes off, pull the chickpeas and let the potatoes roast for 10 more minutes.
- Pull the potatoes from the oven. To serve, top your serving of sweet potatoes with the roasted chickpeas and grape tomatoes. Sprinkle with parsley and drizzle with lemon garlic sauce.
