White Chickpea Chili

Ingredients

  • 1 tablespoon olive oil OPTIONAL, or use 1/4 cup vegetable broth
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 15 oz can white beans rinsed and drained
  • 1 15 oz can chickpeas rinsed and drained
  • 1 16 oz jar mild salsa verde
  • 4 cups low-sodium vegetable broth
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp dried oregano
  • 1/4 cup cilantro chopped
  • 1 lime medium
  • Salt to taste
  • black pepper to taste

Optional toppings:

  • Tortilla chips crushed
  • avocado chopped
  • cilantro chopped

Instructions

  • In a large pot, saute the onion until tender, about 5 minutes. Add the garlic and cook for an additional 2-3 minutes. Stir in the rest of the ingredients.
  • Simmer chili on low for about 15-20 minutes. Taste and add more lime juice or salt and pepper if needed.
  • Serve with toppings.
