White Chickpea Chili

Ingredients
- 1 tablespoon olive oil OPTIONAL, or use 1/4 cup vegetable broth
- 1 yellow onion diced
- 3 cloves garlic minced
- 1 15 oz can white beans rinsed and drained
- 1 15 oz can chickpeas rinsed and drained
- 1 16 oz jar mild salsa verde
- 4 cups low-sodium vegetable broth
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 1/4 tsp dried oregano
- 1/4 cup cilantro chopped
- 1 lime medium
- Salt to taste
- black pepper to taste
Optional toppings:
- Tortilla chips crushed
- avocado chopped
- cilantro chopped
Instructions
- In a large pot, saute the onion until tender, about 5 minutes. Add the garlic and cook for an additional 2-3 minutes. Stir in the rest of the ingredients.
- Simmer chili on low for about 15-20 minutes. Taste and add more lime juice or salt and pepper if needed.
- Serve with toppings.
