Pecan Apple Chickpea Salad Wraps

Ingredients

For the salad:

  • 1 15 oz can chickpeas rinsed and drained
  • 1 honeycrisp apple cored and diced
  • 1/3 cup pecans chopped and toasted
  • 1/3 cup dried cherries
  • 2 stalks celery chopped
  • 2 tbsp flat-leaf parsley chopped
  • 3-4 green onions chopped

For the dressing:

  • 3 tbsp hummus
  • 2 tsp pure maple syrup
  • 1 tsp dijon mustard
  • 1 tsp apple cider vinegar
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • 1 pinch black pepper

For the wraps:

  • 4 8 in whole wheat flour tortillas or other wrap, can also use collard green leaves as a wrap
  • 4 cups baby spinach
  • 1 cup shredded carrots

Instructions

  • In a large bowl, mash the chickpeas lightly with a fork. Add in the rest of the ingredients.
  • In a separate bowl, make the dressing by mixing all the ingredients until smooth. If needs to be thinned add a couple of tablespoonfuls of water.
  • Mix the dressing into the chickpea salad.
  • Assemble the wraps by layering spinach leaves, shredded carrots and the salad inside the wraps.
