Pecan Apple Chickpea Salad Wraps

Ingredients
For the salad:
- 1 15 oz can chickpeas rinsed and drained
- 1 honeycrisp apple cored and diced
- 1/3 cup pecans chopped and toasted
- 1/3 cup dried cherries
- 2 stalks celery chopped
- 2 tbsp flat-leaf parsley chopped
- 3-4 green onions chopped
For the dressing:
- 3 tbsp hummus
- 2 tsp pure maple syrup
- 1 tsp dijon mustard
- 1 tsp apple cider vinegar
- ¼ tsp garlic powder
- ¼ tsp salt
- 1 pinch black pepper
For the wraps:
- 4 8 in whole wheat flour tortillas or other wrap, can also use collard green leaves as a wrap
- 4 cups baby spinach
- 1 cup shredded carrots
Instructions
- In a large bowl, mash the chickpeas lightly with a fork. Add in the rest of the ingredients.
- In a separate bowl, make the dressing by mixing all the ingredients until smooth. If needs to be thinned add a couple of tablespoonfuls of water.
- Mix the dressing into the chickpea salad.
- Assemble the wraps by layering spinach leaves, shredded carrots and the salad inside the wraps.
