Smoky Black Bean Beet Burger

Ingredients
- 3/4 cup cooked quinoa
- 1/2 red onion minced
- 1 cup mushrooms finely chopped
- 1 15 oz can black beans rinsed and drained
- 1 beet medium, finely grated
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- 1/2 cup walnuts ground
- salt to taste
- pepper to taste
Instructions
- In a large non-stick skillet sauté the onion with optional olive oil over medium-low heat for about 5 minutes.
- Stir in the mushrooms. Season with salt and pepper and cook for a couple more minutes, until the mushrooms and onions are slightly browned and fragrant.
- Transfer to a large bowl and add black beans and mash. Mix in add the quinoa, beets and spices. Add the ground walnuts until the mixture is thick enough to form into patties.
- Preheat the oven to 375 degrees. In the meantime, refrigerate the mixture for 15 minutes.
- Line a baking sheet a silicone liner. Form mixture into roughly 8 patties. Arrange burgers on a baking sheet and spray the tops with olive oil. Bake for 15 minutes, flip, return to the oven and bake for 15 more minutes. If needed, bake for a few more minutes to crisp up.
- Serve on small buns or atop mixed greens.
