BBQ Baked Tofu Rainbow Bowls

Ingredients
- 1 lb. extra firm tofu drained, pressed and cubed
- 1/2 cup BBQ sauce
- 2 cups cooked quinoa
- 2 sweet potatoes peeled and sliced
- 2 avocados cubed
- 1 1/2 cups cherry tomatoes halved
- 1/4 head red cabbage shredded or sliced
- 1 bunch kale
- 1/3 cup cilantro chopped
Instructions
- Preheat oven to 375 degrees.
- Place the sweet potato slices on a silicone mat lined baking sheet. Bake for 15 minutes. Flip, and roast for additional 5-7 minutes.
- Place tofu on a cookie sheet lined with a silicone liner. Season with salt and pepper. Bake until golden brown, about 40 minutes, turning halfway through. Pour BBQ sauce over the tofu and toss to coat. Bake an additional 5 minutes.
- Combine all the ingredients in a bowl.
