Oven-Roasted Home Fries

Ingredients
- 2 cups baby red potatoes cup into 1-in. cubes
- 2 cups rutabaga peeled and cut into 1-in. cubes
- 2 cups sweet potatoes cut into 1-in. cubes
- 4-6 tbsp low-sodium vegetable broth
- 3/4 tsp dried basil
- 3/4 tsp thyme
- 3/4 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp sea salt optional
- 1/4 tsp Freshly ground black pepper
- 2/3 cup red onion diced
- 2/3 cup green bell pepper diced
- 2/3 cup red bell pepper diced
Instructions
- Preheat oven to 425. Line a baking sheet with parchment paper or a silicone liner.
- In a large bowl, combine everything but the onion and bell peppers. Make sure it's well mixed and well coated with the spices.
- Transfer mixture to the prepared baking sheet, and spread out in a single layer. Bake for 20 minutes.
- Pull from oven, stir and flip with a spatula. Scatter onion and bell peppers over top, and bake for 15-20 more minutes. Serve hot.
Notes
NOTE: You can substitute rutabagas with any other root vegetable.
