California Salad
This salad is filling and fresh.

Ingredients
- 3 cups quinoa cooked
- 3 cups kale de-stemmed and chopped
- 1 red bell pepper diced
- 1 cup shredded carrots
- 1 cup edamame or chickpeas, etc.
- 1 cup grapes sliced
- 1/2 cup sweet corn
- 1/2 cup shredded coconut unsweetened
- 1/2 cup pecans crushed
- 1/4 cup cilantro chopped
Champaigne vinaigrette
- 1/4 cup filtered water
- 2.5 tbsp Champagne vinegar or wine vinegar
- 1 tbsp maple syrup
- 3 tsp Dijon mustard
- 2 tbsp shallot chopped
- 3/4 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Place chopped kale In a large salad bowl, set aside.
- In a food processor, pulse the bell pepper and carrots until finely shredded. Add into the bowl of kale. Then add the rest of the salad ingredients and mix well.
- Prepare the dressing by whisking all the dressing ingredients together in a small bowl, or blending them in a small food processor.
- Pour the dressing over the salad, mix and enjoy.
