5-Minute Blackberry Cobbler

Ingredients
- 2 cups blackberries fresh or frozen
- 2 tbsp maple syrup or sweetener of choice
- 2 tsp cornstarch
- 3/4 cups rolled oats
- 1/4 cup whole wheat flour
- 4 tsp brown sugar
- 1 tsp baking powder
- 1 pinch salt
- 1/2 cup unsweetened almond milk
- 3 tbsp unsweetened applesauce
Instructions
- In a microwave-safe cup or bowl, heat berries, maple syrup, and cornstarch for 30 seconds. Divide between 4 microwave-safe bowls.
- In a separate bowl, mix remaining ingredients to make a batter.
- Spoon batter on top of berries in each bowl and microwave each one for 1 minute.
- Check the topping for doneness and microwave an additional 30 - 60 seconds if needed.
