Ingredients

  • 2 cups blackberries fresh or frozen
  • 2 tbsp maple syrup or sweetener of choice
  • 2 tsp cornstarch
  • 3/4 cups rolled oats
  • 1/4 cup whole wheat flour
  • 4 tsp brown sugar
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/2 cup unsweetened almond milk
  • 3 tbsp unsweetened applesauce

Instructions

  • In a microwave-safe cup or bowl, heat berries, maple syrup, and cornstarch for 30 seconds. Divide between 4 microwave-safe bowls.
  • In a separate bowl, mix remaining ingredients to make a batter.
  • Spoon batter on top of berries in each bowl and microwave each one for 1 minute.
  • Check the topping for doneness and microwave an additional 30 - 60 seconds if needed.
