Vegan Apple Crisp

Ingredients

For the filling:

  • 8 apples 4 tart, 4 sweet, peeled, cored and thinly sliced
  • 1 lemon juice of
  • 2/3 cup coconut sugar
  • 1 1/2 tsp ground cinnamon
  • 3 Tbsp cornstarch
  • 1/4 cup apple juice
  • 3/4 tsp fresh ginger grated
  • 1 pinch nutmeg optional

For the topping:

  • 1 cup rolled oats
  • 1/2 cup almond meal
  • 1/2 cup unbleached all-purpose flour
  • 1/2 cup coconut sugar
  • 1/2 cup brown sugar
  • 1/2 cup pecans chopped
  • 1/4 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 cup olive oil

Instructions

  • Preheat oven to 350 degrees F (176 C).
  • Combine all filling ingredients in a large bowl. Toss to combine. Add to a 9x13 baking dish.
  • In a separate bowl, combine all the topping ingredients. Stir to break down any clumps. Layer over apple mixture in the baking dish.
  • Bake for 50 minutes to 1 hour until the filling is bubbly, the apples are very fork tender, and the topping is a deep golden brown.
  • Let rest at least 30 minutes before serving.
