Vegan Apple Crisp

Ingredients
For the filling:
- 8 apples 4 tart, 4 sweet, peeled, cored and thinly sliced
- 1 lemon juice of
- 2/3 cup coconut sugar
- 1 1/2 tsp ground cinnamon
- 3 Tbsp cornstarch
- 1/4 cup apple juice
- 3/4 tsp fresh ginger grated
- 1 pinch nutmeg optional
For the topping:
- 1 cup rolled oats
- 1/2 cup almond meal
- 1/2 cup unbleached all-purpose flour
- 1/2 cup coconut sugar
- 1/2 cup brown sugar
- 1/2 cup pecans chopped
- 1/4 tsp sea salt
- 1 tsp ground cinnamon
- 1/2 cup olive oil
Instructions
- Preheat oven to 350 degrees F (176 C).
- Combine all filling ingredients in a large bowl. Toss to combine. Add to a 9x13 baking dish.
- In a separate bowl, combine all the topping ingredients. Stir to break down any clumps. Layer over apple mixture in the baking dish.
- Bake for 50 minutes to 1 hour until the filling is bubbly, the apples are very fork tender, and the topping is a deep golden brown.
- Let rest at least 30 minutes before serving.
