The Ultimate Eggplant Bacon BLT

Ingredients
For Eggplant Bacon:
- 1 eggplant
- 2 Tbsp avocado oil
- 1 1/2 Tbsp tamari
- 1 Tbsp vegan Worcestershire
- 1 Tbsp maple syrup
- 2 tsp liquid smoke
- 1 tsp smoked paprika
- 1 pinch sea salt
- 1 pinch garlic powder
- 1/2 tsp black pepper
For BLT:
- 8 slices whole grain vegan bread
- 1 avocado peeled and pitted
- salt to taste
- 4 tomatoes sliced
- black pepper to taste
- 1 bunch butter lettuce
Instructions
- First, make the eggplant bacon.
- Preheat oven to 225 degrees. Line 2 baking sheets with silicone liners.
- Slice an eggplant into very thin strips with a mandolin or a sharp knife, roughly 1/8th inch.
- Mix together the rest of the ingredients in a small bowl. Brush both sides of the eggplant slices with sauce. Arrange in a single layer on the parchment-lined baking sheet and sprinkle with more black pepper.
- Bake for 20-30 minutes until the eggplant looks dry, dark red, and crispy. Remove from the oven and let cool slightly. It will crisp up the more it cools.
- Once cooled, store in a sealed container in the refrigerator up to 5 days or in the freezer up to 1 month.
- When you’re ready to make sandwiches, first toast the bread. Spread avocado on bread slices. Assemble the rest of the sandwich.
