Sunflower Hummus Wrap

Ingredients
- 4 collard greens leaves
- 2 cups red cabbage shredded
- 1 cup bean sprouts
- 2 roma tomatoes diced
- 1 English cucumber diced
- 2 avocados peeled, pitted and sliced
For Sunflower Hummus:
- 2 cups raw sunflower seeds
- 2 cups water
- 1/2 cup water or more to achieve desired consistency
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 2 tsp curry powder
- salt
- pepper
Instructions
- Soak sunflower seeds in 1 cup water for 6-8 hours.
- Add all hummus ingredients to a food processor and blend until smooth. You may add more water if needed to achieve a thinner consistency.
- Layer ingredients in the collard green leaves, starting with the red cabbage, then hummus, sprouts, tomatoes, cucumber, avocado. Wrap tightly.
