Sunflower Hummus Wrap

Ingredients

  • 4 collard greens leaves
  • 2 cups red cabbage shredded
  • 1 cup bean sprouts
  • 2 roma tomatoes diced
  • 1 English cucumber diced
  • 2 avocados peeled, pitted and sliced

For Sunflower Hummus:

  • 2 cups raw sunflower seeds
  • 2 cups water
  • 1/2 cup water or more to achieve desired consistency
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tsp curry powder
  • salt
  • pepper

Instructions

  • Soak sunflower seeds in 1 cup water for 6-8 hours.
  • Add all hummus ingredients to a food processor and blend until smooth. You may add more water if needed to achieve a thinner consistency.
  • Layer ingredients in the collard green leaves, starting with the red cabbage, then hummus, sprouts, tomatoes, cucumber, avocado. Wrap tightly.
