Spicy Peanut and Edamame Wraps

Ingredients
For the wraps:
- 6 Whole grain tortillas
- 4 cups red cabbage shredded
- 1 1/2 cups carrots shredded (~5 large carrots)
- 1 red bell pepper thinly sliced
- 1 cup edamame frozen, thawed
- 1/2 cup cilantro chopped
- 1/2 cup green onions chopped
- 1/2 cup peanuts
For Peanut Sauce:
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 teaspoon garlic minced
- 1/4 cup peanut butter
- 1/2 tsp salt
- 1/2 tsp crushed red pepper flakes OPTIONAL
Instructions
- Mix all the peanut sauce ingredients in a bowl.
- Mix all the wraps ingredients in a large bowl, except for tortillas. Drizzle with peanut sauce.
- Roll the filling inside the tortillas. Cut in half and serve.
Notes
If making for multiple days, keep the filling separate, in a container, until the morning of, for best results.
If sensitive to heat, skip the red pepper flakes.
