Spicy Peanut and Edamame Wraps

Ingredients

For the wraps:

  • 6 Whole grain tortillas
  • 4 cups red cabbage shredded
  • 1 1/2 cups carrots shredded (~5 large carrots)
  • 1 red bell pepper thinly sliced
  • 1 cup edamame frozen, thawed
  • 1/2 cup cilantro chopped
  • 1/2 cup green onions chopped
  • 1/2 cup peanuts

For Peanut Sauce:

  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 teaspoon garlic minced
  • 1/4 cup peanut butter
  • 1/2 tsp salt
  • 1/2 tsp crushed red pepper flakes OPTIONAL

Instructions

  • Mix all the peanut sauce ingredients in a bowl.
  • Mix all the wraps ingredients in a large bowl, except for tortillas. Drizzle with peanut sauce.
  • Roll the filling inside the tortillas. Cut in half and serve.

Notes

If making for multiple days, keep the filling separate, in a container, until the morning of, for best results.
If sensitive to heat, skip the red pepper flakes.
