Roasted Banana and Bourbon Ice Cream

Ingredients

  • 3 bananas peeled, cut into 1/2 inch chunks
  • 1 tbsp canola oil OPTIONAL
  • 1 can coconut milk
  • 1/3 cup maple syrup
  • 1 tsp pure vanilla extract
  • 2 tbsp bourbon
  • 1/4 tsp salt

Instructions

  • Preheat the oven to 400 degrees
  • Spread bananas on a silicone lined baking sheet. Toast for 30 minutes. Let cool.
  • In a blender, combine all the ingredients. Blend until smooth. Refrigerate for 3 hours. Transfer the mixture into an ice cream maker, and prepare according to manufacturer's instructions. If you do not have an ice cream maker, pour into a bowl, place in the freezer and stir every 30 minutes until the consistency of soft serve.
