Raw Strawberry Mango Avocado Tacos

Ingredients
- 1 bib lettuce bunch leaves, washed and patted dry
- 2 avocados peeled, pitted and chopped
- 1 jalapeño minced, OPTIONAL (skip if heat sensitive)
- 1/2 red onion minced
- 1 lime juice of
- salt to taste
- 1 container strawberries cleaned and sliced
- 2 mangos peeled and cubed
- 1 pint grape tomatoes halved
- 1/3 bunch cilantro chopped
- 1 sprig mint chopped or torn
Instructions
- In a small bowl, lightly mash avocado, jalapeño, onion, lime juice, and salt together with a fork so some chunks are left.
- In a medium bowl, toss together the strawberries, mango, tomatoes, and herbs.
- Spread a large dollop of the avocado mixture on each lettuce leaf. Spoon the fruit mixture on top. Fold like a tortilla and eat.
Notes
If you're looking for a more filling dish, use corn tortillas. In that case, chop the lettuce and mix it in with the fruit mixture before assembling tacos.
