Power Granola

Ingredients
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
- 3 tbsp flaxseed meal (ground flaxseed)
- 3 cups steel-cut oats
- 1 ½ cup walnuts chopped
- 2 tbsp chia seeds
- ½ cup raw pumpkin seeds
- ½ cup dried blueberries
Instructions
- Preheat oven to 325°. Line a baking sheet with silicone or parchment paper.
- In a large bowl, combine applesauce, maple syrup, and all the spices first. Mix to combine. Then stir in the rest of the ingredients except pumpkin seeds and blueberries.
- Spread the mixture in the prepared baking sheet. Bake for 20 minutes, pull from the oven, add pumpkin seeds, return to oven. Continue baking for 25 more minutes or until golden. If your oven is not baking evenly, you may need to keep an eye on it and toss the mixture on the pan halfway through, to make sure it bakes evenly.
- Cool in pan on a wire rack until completely cooled off. Stir in blueberries. Store, uncovered, at room temperature up to 10 days or freeze, covered, up to 2 months.
