Kimchi Zoodles with Honey Tamari Almonds

Ingredients

  • 2 zucchini medium, spiralized
  • 2 cups cabbage kimchi finely chopped
  • 2 tbsp apple cider vinegar
  • 2 tbsp avocado oil OPTIONAL
  • 4 tsp tamari
  • 1 tsp maple syrup

Maple Tamari Almonds

  • 1 cup raw almonds
  • 2 tsp agave nectar
  • 2 tsp tamari
  • 1/2 tsp chili flakes skip if heat sensitive

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with a silicone liner.
  • Toss together all the almond ingredients in a bowl. Spread out in a single layer on the baking sheet. Bake for 9-10 minutes, until browned and caramelized. Pull and let cool to room temperature. Roughly chop and set aside.
  • In a large bowl, toss zoodles with kimchi. In a small bowl, combine the rest of the ingredients. Add to zoodles and toss to combine.
  • Divide zoodles between bowls and top with chopped almonds.
