Grilled Veggie Pasta Primavera

Ingredients

  • 1 pkg rigatoni uncooked
  • 1 zucchini sliced thick
  • 1 yellow squash sliced thick
  • 1 red onion sliced thick
  • 1 pint grape tomatoes halved
  • 1 tsp Italian seasoning
  • 1 tsp dried rosemary
  • 1 can cannellini beans rinsed and drained
  • 1 tbsp pine nuts OPTIONAL
  • 1 jar basil & tomato marinara

Instructions

  • Cook pasta al dente following package instructions. Drain and set aside covered.
  • Preheat grill to medium-high heat. Combine all the veggies in large bowl. Season with salt and black pepper.
  • Grill until vegetables are crisp-tender and lightly charred. Remove vegetables from grill, combine with cooked pasta. Add in beans and marinara. Toss to combine. If needed, heat through on the stove top for a few minutes.
  • Serve sprinkled with pine nuts.
