Green Goddess Chia Pudding

Ingredients

  • 4 Medjool dates pitted and chopped
  • 4 cups almond milk
  • 4 cups baby spinach
  • 12 Tbsp chia seeds or 3/4 cup

Instructions

  • In a high speed blender, blend the date, milk, and spinach until very smooth.
  • Transfer the liquid into a large bowl, mix in chia seeds. Stir well, and continue stirring every few minutes, for about 15 minutes.
  • Refrigerate for at least an hour, best overnight.
  • Just before serving, stir again, then top with your favorite toppings, like chopped fruit, berries, coconut flakes, etc
