Cilantro-Peanut Stir-Fry

Ingredients

  • 1/2 in fresh ginger grated
  • 2 cloves garlic minced
  • 1 cup pineapple juice
  • 1/4 cup reduced sodium soy sauce
  • 1 pkg extra-firm tofu
  • 4 cups stir-fry mixed vegetables
  • 2 cups brown rice cooked
  • 1/2 cup roasted salted peanuts for topping
  • 1/2 cup cilantro chopped

Instructions

  • Press tofu for 10 minutes. Cube.
  • Combine the first 4 ingredients in a bowl. Add cubed tofu and let marinate for about 10 minutes. Drain tofu, reserving the marinade.
  • Saute tofu in a non-stick skillet for about 10 minutes until golden. Set aside.
  • Warm brown rice. Assemble bowls by layering brown rice, stir fry veggies, and tofu. Top with cilantro and peanuts.
