Blueberry Quinoa Power Bowl

Ingredients

  • 1 cup quinoa cooked with 2 cups vegetable broth
  • 2 cups low-sodium vegetable broth
  • 1 cup frozen blueberries thawed
  • 1 avocado pitted and diced
  • 1 bag baby spinach
  • ½ cup walnuts toasted and chopped

For the dressing:

  • ¼ cup olive oil OPTIONAL
  • 2 Tbs. lemon juice
  • 3/4 tsp. salt
  • ¼ tsp. black pepper
  • 1 tsp. lemon zest of

Instructions

  • In a large bowl, combine cooked quinoa, blueberries, avocado, spinach and walnuts.

For lemon vinaigrette dressing:

  • Whisk olive oil (OPTIONAL), lemon juice, kosher salt and pepper until blended. Stir in lemon zest.
  • Toss with quinoa salad until evenly coated.
