Blueberry Peach Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups blueberries
  • 1 peach pitted and chopped
  • 2 cups arugula

Dressing:

  • 1 orange juice and zest of
  • 2-4 tbsp red wine vinegar
  • 1/4 tsp black pepper
  • 1 tsp kosher salt
  • 2 tbsp olive oil OPTIONAL

Instructions

  • Cook quinoa. Set aside.
  • In a large bowl, whisk all dressing the ingredients together.
  • Add cooled quinoa, blueberries, peach, and arugula and mix until evenly coated.

Notes

This can be served either warm or cold. 
You can cook the quinoa ahead of time and keep in a lidded container in the fridge until ready to assemble and serve.
