Blueberry Five Bean Salad

Ingredients
- 1 15-oz can red kidney beans rinsed and drained
- 1 15-oz can chickpeas rinsed and drained
- 1 15-oz can black beans rinsed and drained
- 1 15-oz can black-eyed peas rinsed and drained
- 1 15-oz can green beans rinsed and drained
- 1 cup frozen corn thawed
- 1 cup blueberries
- 1 red onion finely chopped
- 1 bunch cilantro finely chopped
For the dressing:
- ½ cup olive oil
- ½ cup blueberries
- ¼ cup apple cider vinegar
- 1 tsp mustard
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Blend the 1/2 cup of blueberries, apple cider vinegar, mustard, salt and pepper in a blender until smooth. Pour in olive oil and pulse for a few seconds.
- In a large bowl, add all the salad ingredients and stir until mixed together. Pour the dressing over the salad; stir to combine. Serve.
