Ingredients

  • 1 15-oz can red kidney beans rinsed and drained
  • 1 15-oz can chickpeas rinsed and drained
  • 1 15-oz can black beans rinsed and drained
  • 1 15-oz can black-eyed peas rinsed and drained
  • 1 15-oz can green beans rinsed and drained
  • 1 cup frozen corn thawed
  • 1 cup blueberries
  • 1 red onion finely chopped
  • 1 bunch cilantro finely chopped

For the dressing:

  • ½ cup olive oil
  • ½ cup blueberries
  • ¼ cup apple cider vinegar
  • 1 tsp mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Blend the 1/2 cup of blueberries, apple cider vinegar, mustard, salt and pepper in a blender until smooth. Pour in olive oil and pulse for a few seconds.
  • In a large bowl, add all the salad ingredients and stir until mixed together. Pour the dressing over the salad; stir to combine. Serve.
