Ingredients

For the salad:

  • 2 sweet and tart apples large, cored and julienned
  • 3-4 beets peeled and julienned
  • 1 1/2 cups shredded carrots
  • 1 bag chopped kale
  • 1 cup dried cranberries
  • raw pumpkin seeds to garnish

For the dressing:

  • 1/2 cup orange juice
  • 2 tbsp apple cider vinegar
  • 4 tsp dijon mustard
  • 1/2 tsp onion powder
  • pinch salt
  • pinch black pepper

Instructions

  • Whisk together the dressing ingredients in a small bowl. Set aside.
  • Toss the salad ingredients in a large bowl. Dress
  • Sprinkle with pumpkin seeds when serving.
