Apple Carrot and Beat Slaw

Ingredients
For the salad:
- 2 sweet and tart apples large, cored and julienned
- 3-4 beets peeled and julienned
- 1 1/2 cups shredded carrots
- 1 bag chopped kale
- 1 cup dried cranberries
- raw pumpkin seeds to garnish
For the dressing:
- 1/2 cup orange juice
- 2 tbsp apple cider vinegar
- 4 tsp dijon mustard
- 1/2 tsp onion powder
- pinch salt
- pinch black pepper
Instructions
- Whisk together the dressing ingredients in a small bowl. Set aside.
- Toss the salad ingredients in a large bowl. Dress
- Sprinkle with pumpkin seeds when serving.
