Apple Baked Pancake

Ingredients
- 1 sweet apple peeled, cored and thinly sliced
- 2 1/2 tsp cinnamon
- 4 Tbsp maple syrup or brown sugar
- 1 banana mashed
- 1/2 cup unsweetened applesauce
- 1 tsp pure vanilla extract
- 1 Tbsp ground flaxseed (flaxseed meal)
- 3/4 cup unsweetened almond milk
- 3/4 cup oat flour
- 2 tsp baking powder
- 1/4 tsp baking soda
Instructions
- Preheat oven to 350 degrees.
- Line a 10-inch springform pan with parchment paper, spray with baking spray.
- In a small bowl, combine the apple, cinnamon and 2 tbsp maple syrup until the apple slices are well coated. Place the slices in a single layer over the bottom of the pan.
- In a medium bowl, whisk together the mashed banana, applesauce, vanilla, remaining maple syrup, milk, and ground flaxseed.
- In a separate bowl, whisk together the flour with baking soda and baking powder. Mix in the wet mixture and stir until well combined. Pour batter over the apples in the pan and smooth over.
- Bake for about 40-45 minutes until the top is golden. Remove from oven and allow to cool completely. Once cool, run a knife along the edge of the pancake to loosen it. Remove the spring form. Place a plate on top of the cake and carefully flip over. Remove parchment from the pancake. Serve with your preferred toppings.
