Chocolate Pancakes with Blueberry Maple Sauce
Yes, this is actually healthy! You can have these with no guilt whatsoever. They are completely WFPB compliant & vegan!

- ceramic frying pan (or non-stick)
Ingredients
- 1 3/4 cup rolled oats
- 1 cup rice flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp cocoa powder
- 1 tbsp maple syrup
- 1/3 cup apple sauce
- 2/3 cup almond milk
- 3/4 cup water
Blueberry Maple Sauce
- 1 cup frozen blueberries
- 1/4 cup maple syrup
- 1/2 cup water
Instructions
- Grind rolled oats in the food processor. Mix with the rest of the pancake ingredients in a bowl.
- As always with pancakes, you may need to add more liquid or more flour to get the right consistency, so it's not too runny or too thick. Cook as you would any other pancakes. Ladle pancake batter into a hot pan. Cook for 2-4 minutes per side, depending on size and consistency of the batter. Ceramic pans really help avoid using any oil in frying. However, if you must use vegetable oil, used the minimum amount necessary to prevent sticking.
- Make the blueberry sauce. Combine all the sauce ingredients in a pan, cook on high heat for 5-7 min or until reduced. Drizzle over pancakes.
- Top with your favorite fruit.
