No-Bake Energy Bites

These are perfect take-along or sweet craving snacks. Perfect for a little pick me up!

Ingredients

  • 1 cup old fashioned oats
  • 2/3 cups shredded unsweetened coconut
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed (flaxseed meal)
  • 1/2 cup mini chocolate chips
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Instructions

  • Mix all the ingredients in a bowl. Using a table spoon, spoon mixture into the palm of your hand and roll into an inch-sized ball (approximately).
  • Refrigerate overnight. Good to use throughout the week. Or make a large batch and freeze.
