No-Bake Energy Bites
These are perfect take-along or sweet craving snacks. Perfect for a little pick me up!

Ingredients
- 1 cup old fashioned oats
- 2/3 cups shredded unsweetened coconut
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed (flaxseed meal)
- 1/2 cup mini chocolate chips
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Instructions
- Mix all the ingredients in a bowl. Using a table spoon, spoon mixture into the palm of your hand and roll into an inch-sized ball (approximately).
- Refrigerate overnight. Good to use throughout the week. Or make a large batch and freeze.
