Baked Blueberry Oatmeal

Ingredients
- 2 cups blueberries
- 2 cups old fashioned oats
- ½ cup pecans chopped
- 1 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp vanilla extract
- 2 cups unsweetened almond milk
- ¼ cup maple syrup
- 2 tbsp flaxseed
- 1 tbsp coconut oil OPTIONAL, melted
Instructions
- Preheat the oven to 375.° Spray an 8x11 inch baking dish with oil spray. Spread 1 cup of the blueberries at the bottom of the baking dish.
- In a large bowl, combine the oats, pecans, cinnamon, baking powder, and salt. Spread on top of the blueberries in the baking dish.
- In a separate bowl, whisk together the almond milk, maple syrup, flaxseed, melted coconut oil, and vanilla extract. Pour over the oats in the baking dish and lightly press down to cover all the oats. Sprinkle the remaining 1 cup blueberries on top.
- Bake uncovered until the top of the oatmeal is golden and the mixture is set, about 35-40 minutes. Remove and allow it to cool for 5 minutes.
- Serve with maple syrup
