Veggie Tofu Scramble

Ingredients

  • 1 yellow onion chopped
  • 1 container mushrooms sliced
  • 1/2 cup low-sodium vegetable broth
  • 1 12 oz pkg firm tofu drained and crumbled
  • 2 tbsp tamari
  • 1/4 cup parsley finely chopped
  • 2 tbsp nutritional yeast flakes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground turmeric
  • 1 tsp freshly ground black pepper
  • 2 cup baby spinach chopped
  • 1 cup salsa

Instructions

  • In a medium saucepan, saute onions and mushrooms over medium heat in vegetable broth for 5 minutes , or until onions are translucent.
  • Stir in tofu, tamari, parsley, nutritional yeast flakes, garlic powder, onion powder, turmeric, and black pepper, and simmer for 10-12 minutes or until moisture has evaporated. Add spinach and salsa, and scramble for 2-4 minutes or until brown at the edges.
  • Serve hot with warm corn tortillas or a side of brown rice or quinoa, if desired.
